The function of yogurt starter bacteria is to ferment lactose (milk sugar) to produce lactic acid, which creates the yogurt consistency. This fermentation also produces the flavour of the yogurt. The main starter bacteria in yogurt are Lactobacillus bulgaricus and Streptococcus thermophilus.
