The Lunchbox Doctor's s Banoffee Puddings

Serves 2


10 oatcakes (about 90g in weight)
1 heaped tsp unrefined sugar
1 tbsp melted coconut oil or butter
200g yogurt
1 tsp vanilla extract
A handful of walnuts
1 banana, sliced
1 tsp maple syrup


Using a food processor or a bag and rolling pin, grind or bash the oatcakes to a crumb-like texture

In a bowl stir the crumbed oatcakes with the unrefined sugar and melted butter or oil

Once thoroughly combined push this mixture into the base of two ramekins. Use the back of a spoon to compress the mixture into the bases

In a separate bowl mix the yogurt and vanilla extract

Pour this on top of the crumbed base

Top the yogurt with nuts, banana and a drizzle of maple syrup and serve
